Say « bonjour » until the evening, then switch to « bonsoir ». « Salut » (hi) is only for friends and family.
Always say « bonjour » when you walk into a shop or start talking to someone. Skipping it sounds rude in France.
French has two ways to say “you”: « tu » with a friend or a family member, « vous » with strangers, at work, in shops, and whenever you talk to several people. When in doubt, use « vous ».
« De rien » is the everyday “you're welcome”. « Je vous en prie » is more polite and common in shops and at work.
